It stands to reason that a love of coffee would be the backstory behind any new coffee shop. Not so with Publik Coffee Roasters. Publik started with a building and a desire to build a community. It just turned out that coffee would be the catalyst.
When owner and entrepreneur Missy Greis purchased a 13,000-square-foot building at 975 West Temple, she knew nothing about coffee roasting. She just knew that if the space was right and if the coffee was good, people would come. Her first task in getting the space just right started with a phone call to Lloyd Architects.
The foundation of Publik Coffee Roasters, one of Salt Lake City’s most magnetic gathering spaces, is a simple one: Quality over quantity. Community over corporate. Planet over profit. It’s a foundation that propelled the Publik brand to four locations.
Publik, Dutch for “community,” lives up to its name every day of the week. Coffee cultivates community, and Publik’s coffee houses are designed to be the gathering places that build it. As Publik celebrates its 10th anniversary, we reflect on how the architecture supports the brand.
